Amestecam bine ,bine ,apoi lasam 10-15 minute ca sa isi lase zeama .Punem in burcane zarzavatul si zeama ramasa in castron o impartim la toate borcanele.Inchidem bine capacele si le depozitam intr-un loc racoreos si intunecat pana la iarna.<br />
Daca nu va place cu conservant,desi tine foarte bine , atunci dupa ce ametecati toate ingredientele,umpleti borcanele si le fierbeti.<br />

Se bat albusurile spuma tare cu un praf de sare,se adauga zaharul,zaharul vanilat,se bate bine pana se topeste zaharul,esenta,galbenusurile,apoi faina cu praful de copt.Se coc 4 foi in tava mare pentru aragaz.Se lasa sa se raceasca.<br />

Crema de ciocolata fiarta:<br />

Restul 400 ml de lapte se pune pe foc sa fiarba. Cand a inceput sa fiarba se da de pe foc si se toarna continutul din castron ,amestecand continuu cu un tel.Cand este bine omogenizat se pune din nou pe foc sa fiarba cateva minutele mici ,amestecand mereu sa nu se lipeasca. Lasam crema putin sa se racoreasca,apoi amestecam cu margarina si esenta de rom.<br />

Crema de vanilie :<br />
un plic crema de vannilie de la Dr. Oetker ,3-4 linguri de zahar, si 250 ml lapte rece pentru prepararea cremei.Urmariti instructiunile de pe ambalaj.<br />

Pe o tava mare punem prima foaie de blat,insiropam si punem trei sferturi din crema de ciocolata,punem a doua foaie de blat,insiropam,punem crema de vanilie toata, al treilea blat,insiropam ,punem restul de crema de ciocolata si putina frisca batuta,ultimul balt deasupra,insiropam si taiem blatul cum am desenat eu pe foaie ca nu am mai apucat sa fac poze :( scuze<br />
Pe foaie am scris pe partile care raman dupa ce decupam modelul de catel, ce sa faceti cu ele, completati pentru urechi,formati capul,coada si tot ce ramane puneti pe spate.Decorati cu frisca si crema de ciocolata cum va place voua sa arate catelusul.Nu uitati de ochi, nas si fundita daca vreti sa fie fetita :)<br />

Am pus intr-un castron untura, Atentie! am pus 4 linguri mari de lemn de untura,cred ca ar fi 250-300 gr de untura,dar nu va faceti griji daca puneti mai multa sau mai putina,aluatul trebuie sa fie tare,daca vi se pare prea tare sau prea moale mai adaugati lapte sau nu adaugati 700 gr de faina.laptele,oul,zaharul,esenta,coaja de lamaie,sara si nucile si am amestecat bine cu un tel. Apoi am adaugat faina cu praful de copt putin cate putin pana o incorporam pe toata si devine omogen. Aluatul este unul tare si putin greu de amestecat dar sa nu va faceti griji ca or sa iasa niste fursecuri delicioase.<br />

Adaug morcovul si telina date pe razatoarea cu gauri mici, apoi ardeiul gras tocat dar nu foarte mic si calesc bine.Intre timp toc ciupercile si le adaug pe rand.Cand s-au inmuiat legumele adaugam orezul spalat in 3-4 ape si calim putin impreuna. Adaugam 4 cani de apa,sare,piper, cumbru,busuioc,delikat,maar si patrunjel si lasam sa fiarba la foc mic pana scade apa.Stingem focul si lasam sa se racoreasca. Intre timp taiem foile de varza si le pregatim pentru umplut. Asezam intr-o cratitamare un strat de varza toacata,putin cimbru si 2 foi de dafin, apoi asezam sarnmalele si deasupra iar un strat de varza si pasta de toamate. Completam cu apa si fierbem la foc mediu 30-40 mic ,apoi dam la cuptor,completand cu apa.<br />
Mi-au iesit 80 de sarmale. Atentie, nu puneti mult orez in frunza pentru ca el se va umfla la fiert si va vor iesi niste sarmale babane.<br />

Intr-o tigaie punem o lingurita ulei de masline si calim ceapa,apoi ardeiul,pieptul de pui,calim bine pana carnea isi schimba culoarea,apoi adaugam o cana de apa ,pasta de tomate,sare,piper,cimbru si busuioc dupa gust si usturoi tocat marunt. Lasam sa fiarba pana scade apa,apoi adaugam patrunjel tocat.<br />
Eu am avut doar o vanata dar este mai bun cu 2 vinete. Am taiat vanata pe lung in 5 feli si le-am fript pe gratar cu un praf de sare.<br />

Eu am pus 2 polonice ca sa iasa atat de mari clatitele,apoi cu o lingura am dat forma ( am aranjat aluatul)<br />
Cand incepe sa apara bule si sa se usuce putin aluatul la suprafata e timpul sa o intoarceti cu o paleta. Vedeti in poza cum trebuie sa arate cand trebuie intoarsa.<br />
Procedati la fel pana coaceti toate clatitele.<br />

Punem pe foc laptele cu zaharul,zaharul vanilat si esenta de vanilie.Cand incepe sa fiarba ,adaugam grisul si amesteca bine sa nu faca cocoloase.Lasam sa se raceasca complet,apoi adaugam pachetul de unt la temperatura camerei si mixam foarte bine cu mixerul pana devine spumos.<br />
Asezam o foaie pe o tava,punem jumatate din crema de gris,iar foaie,un borcan de gem,iar foaie,ceaalta jumatate din crema de gris,ultima foaie si asezam deasupra o tava sau un tocator pe care punem o cratita cu apa.Lasam la presat pana a doua zi<br />

Se bat albusurile spuma tare cu un praf de sare.<br />

Dupa ce sa racit,se taie forme rotunde cea mai mare de jos sa aibe diametru in jur de 17 cm,urmatoarea sa fie in jur de 15 cm, 13cm, si cea mai mica sa fie 3-4 cm<br />
Lungimea fustei turtului este in jur de 18-19 cm<br />

In capat faceti o gaura cu un cutit ascutit unde bagati picioarele papusii care au fost imbracate in folie alimentara.<br />

Amestecam toate ingredientele cu maioneza,sare si piper dupa gust,apoi umplem clatitele inainte de servire.<br />

Nu uitati sa intepati toba din loc in loc cu o scobitoare ca sa iasa aerul. Dupa ce a fiert tot cu grija scoateti pe o tava,deasupra asezati un tocator sau o tava si puneti o greutate. Eu am pus un castron cu apa. Lasam peste noapte la presat la loc rece.<br />

Intr-o craticioara punem 200 ml frisca lichida si punem pe foc. Cand a inceput sa fiarba adaugam untul si dam de pe foc. Amestecam bine pana se topeste untul si apoi adaugam ciocolata rupta in bucatele,amestecam foarte bine pana se topeste ciocolata si devine o crema fina Adaugam o fiola de esenta de rom si amestecam.Acoperim castronul cu folie si dam la frigider pt 30 min . Ca sa umplem trufe cu visine sau cu ce altceva doriti ,luam cu o lingurita ,pume in palma,punem o visina si modelam in palme bile pe care le tavalim prin cacao,nuca de cocos sau ciocolata topita . Pentru glazura de ciocolata,topim o ciocolata cu lapte cu 50 ml de frisca lichida si cand este rece tavalim trufele prin acesta glazura<br />

Cand scade putin si incepe sa se lipeasca ,atunci e momentul sa bagati la cuptor,cu focul pe la jumate pana scade bine si incepe sa se ridice uleiul.<br />
Punei fierbinte in borcane sterilizate in cuptor,strangeti bine bine capacul si intoarceti cu capacul in jos.Lasati pana dimineata sa se raceasca asa.Apoi daca vreti sa tineti zacusca pana la iarna,trebuie sa le sterilizati.<br />
Bagati borcanele intr-o tava in cuptor pentru 30-40 minute<br />
Pofta buna va urez si spor la treaba :)<br />
